Halloween Recipes of the Week
Pan de Muertos (Mexican Bread of the Dead)
Some bread for Dia de los Muertos (Day of the Dead) in Mexico. You can
also mold the bread into different shapes like skulls and animals.
INGREDIENTS:
* 1/4 cup margarine
* 1/4 cup milk
* 1/4 cup warm water (110 degrees F/45 degrees C)
* 3 cups all-purpose flour
* 1 1/4 teaspoons active dry yeast
* 1/2 teaspoon salt
* 2 teaspoons anise seed
* 1/4 cup white sugar
* 2 eggs, beaten
* 2 teaspoons orange zest
* 1/4 cup white sugar
* 1/4 cup orange juice
* 1 tablespoon orange zest
* 2 tablespoons white sugar
DIRECTIONS:
1. Heat the milk and the butter together in a medium saucepan, until
the butter melts. Remove from the heat and add them warm water. The mixture
should be around 110 degrees F (43 degrees C).
2. In a large bowl combine 1 cup of the flour, yeast, salt, anise seed
and 1/4 cup of the sugar. Beat in the warm milk mixture then add the eggs
and orange zest and beat until well combined. Stir in 1/2 cup of flour
and continue adding more flour until the dough is soft.
3. Turn the dough out onto a lightly floured surface and knead until smooth
and elastic.
4. Place the dough into a lightly greased bowl cover with plastic wrap
and let rise in a warm place until doubled in size. This will take about
1 to 2 hours. Punch the dough down and shape it into a large round loaf
with a round knob on top. Place dough onto a baking sheet, loosely cover
with plastic wrap and let rise in a warm place for about 1 hour or until
just about doubled in size.
5. Bake in a preheated 350 degrees F (175 degrees C) oven for about 35
to 45 minutes. Remove from oven let cool slightly then brush with glaze.
6. To make glaze: In a small saucepan combine the 1/4 cup sugar, orange
juice and orange zest. Bring to a boil over medium heat and boil for 2
minutes. Brush over top of bread while still warm. Sprinkle glazed bread
with white sugar.
Harvest Pupkin Tarts
INGREDIENTS:
* 1 (14 ounce) can Eagle Brand® Sweetened Condensed Milk
* 1 1/4 cups canned pumpkin puree
* 2 tablespoons brown sugar
* 1 egg
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 24 (3 inch) unbaked tart shells
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Whisk together Eagle Brand®, pumpkin, brown sugar, egg, cinnamon
and nutmeg. Pour evenly into tart shells.
3. Bake in preheated 375 F oven for 18 minutes or until center is just
set and pastry is golden.
4. Cool and garnish as desired.
Jack-O'-Lantern Pie
INGREDIENTS:
* 1 cup boiling water
* 1 (3 ounce) package JELL-O Brand Orange Flavor Gelatin
* 1/2 cup cold water
* 1 (8 ounce) container COOL WHIP Whipped Topping, thawed
* 1 ready-to-use chocolate flavor crumb crust (6 oz. or 9 inch)
* 1 (14 ounce) package candy corn
* 1 (5 ounce) package black licorice, cut into 1-inch pieces
DIRECTIONS:
1. Stir boiling water into gelatin in large bowl 2 minutes or until
completely dissolved. Stir in cold water. Refrigerate 1 hour or until
slightly thickened (consistency of unbeaten egg whites).
2. Stir in 2 cups of the whipped topping with wire whisk until smooth.
Spread in crust.
3. Refrigerate 2 hours or until firm. Just before serving, decorate pie
to make jack-o-lantern face with remaining whipped topping, candy corn
and licorice. Store leftover pie in refrigerator.
Pumpkin Pie Squares
INGREDIENTS:
* 1/2 cup butter, softened
* 1/2 cup brown sugar
* 1 cup all-purpose flour
* 1/2 cup rolled oats
* 2 eggs
* 3/4 cup white sugar
* 1 (15 ounce) can pumpkin
* 1 (12 fluid ounce) can evaporated milk
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cloves
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream together butter and brown sugar. Mix in flour.
Fold in oats. Press into a 9x13 inch baking dish.
3. Bake in preheated oven 15 minutes, until set.
4. In a large bowl, beat eggs with white sugar. Beat in pumpkin and evaporated
milk. Mix in salt, cinnamon, ginger and cloves. Pour over baked crust.
5. Bake in preheated oven 20 minutes, until set. Let cool before cutting
into squares.
Caramel Apples
INGREDIENTS:
* 6 apples
* 1 (14 ounce) package individually wrapped caramels, unwrapped
* 2 tablespoons milk
DIRECTIONS:
1. Remove the stem from each apple and press a craft stick into the
top. Butter a baking sheet.
2. Place caramels and milk in a microwave safe bowl, and microwave 2 minutes,
stirring once. Allow to cool briefly.
3. Roll each apple quickly in caramel sauce until well coated. Place on
prepared sheet to set.
Halloween Drinks of the Week
Blue Lime Ghost
3 pt lime vodka
1 pt blue curaçao
Sprite/7up
Build in a highball glass packed with ice. Get an extra spooky, smoking
effect by decorating with carbonic ice.
Halloween Cocktail
2 oz Whiskey
1/2 oz Orange Curacao- or - TripleSec
3 oz Orange Juice
1/2 oz Lemon Juice
Shake & Strain in a shaker 3/4 filled with ice into a Collins Glass.
Garnish with an Olive.
Bloody Eyeball Martini
1 Radish
1 Pimiento stuffed green olive
Per drink:
1 shot Gin or vodka
1/4 shot Dry vermouth (more or less)
Prepare ice ''eyeballs'' at least a day before your plan to use them.
Peel radishes, leaving thin streaks of red skin on to represent blood
vessels. Using the tip of the vegetable peeler or a small, knife, carefully
scoop out a small hole in each radish, roughly the size of an olive. Stuff
a green olive, pimiento side out, in each hole. Place 1 radish eyeball
in each section of an empty ice cube tray. Pare the radishes down a bit
to fit, if necessarry. Fill the tray with water and freeze overnight.
To make drink, fill a tall cocktail glass with 3-4 eyeball ice cubes,
add ingredients in the order given. Shake or stir, as is your preference.
Zombie
Creme de Almond 1/2 oz.
Rum, light 1 oz.
Rum, overproof/151 proof 1/2 oz.
Triple Sec 1/2 oz.
Orange Juice 1 1/2 oz.
Sour Mix 1 1/2 oz.
Cherries/Maraschinos 1 whole
Shake everything except the 151 rum in a cocktail shaker with ice. Strain
into a collins glass over ice and float the 151 on top. Garnish with a
cherry.
Black Apple
Schnapps, blackberry (Black Haus) 1/2 oz.
Sour Apple Pucker 1/2 oz.
7-up 1 splash
Sour Mix 1 splash
In a cocktail shaker, combine all ingredients. Shake until chilled and
pour in shot glasses.
Creature of the Night
Vodka 1 oz.
Water 1 oz. (hot)
Coffee, instant 1 tsp.
Mix hot water and the instant coffee powder in a cup and pour it into
a shot glass, about half full. Add in the vodka and serve.
Freddy Krueger
Jägermeister 1 part
Sambuca 1 part
Vodka 1 part
Mix equal parts of everything in a chilled shot glass
Voodoo Doll
Liqueur, raspberry 1/2 oz.
Vodka 1/2 oz.
Cranberry Juice 2 oz.
Orange Juice 2 oz.
Shake everything with ice; strain into a highball glass filled with ice.
Smashing Pumpkin Martini
This spicy, pumpkin-infused cocktail would make a delightful aperitif
from Halloween through Christmas. It was created by Felix Albano, manager
of the bar at Fifty Seven Fifty Seven in New York City.
3 ounces spiced pumpkin vodka
1 ounce Amaretto
Garnish: toasted pumpkin seeds
For pumpkin seeds:
Heat a large heavy skillet over moderate heat until hot. Toast pumpkin
seeds, stirring constantly, until they expand and begin to pop, 3 to 5
minutes. Transfer seeds to a plate to cool.
For Martini:
In a shaker filled with ice, stir spiced pumpkin vodka and Amaretto. Strain
into a chilled cocktail glass. Garnish with toasted pumpkin seeds.
